This fresh lasagna, with its home-made chunky marinara, is a real winner. Store the extra marinara sauce in the fridge for additional meals.

Chicken Vera Cruz
To say that this chicken dish was a recent hit at our family Shabbat dinner would be an understatement! I have had the recipe for over thirty years, having first discovered it in Victoria Principle’s Book, “The Diet Principle”. I forgot all about it until recently, when I pulled it out to make for a family dinner. It got high marks from everyone.

This one is loaded with all things good and nutritious; From beta carotene, (among other important nutrients), packed with butternut squash, to omega-3 loaded walnuts. Arugula, which is a superfood, is loaded with vitamin A, C, and folate, and provides 100% of your daily vitamin K intake, which is important in preventing blood clotting.
Chicken Strips and Crunchy Brussels Sprouts with Peanut Dip
This recipe is so good, that we have made it several times already, and to rave reviews, from all members of my family…young and old. I think it’s the peanut dip that makes it so outrageously delicious. I keep a jar of it in my fridge…it’s that good! Thank you to the fabulous Kim Kushner to whose (Kosher) recipes I am always drawn.
