Garlicky Green Beans with Pine Nuts

I could not be more excited to share this recipe with you. If you are looking for a simpe side dish and a healthy one at that, this one for Green Beans with a touch of garlic is for you!

Ingredients:

  • 1 1/2 pounds fresh green beans
  • 2 Tablespoons olive oil
  • 2 large cloves of garlic, thinly sliced
  • 1/3 cup pine nuts
  • 1/2 teaspoon kosher salt plus more for cooking beans
  • 1/4 teaspoon freshly ground black pepper

Directions:

Bring a large pot of salted water to al boil. Add beans and cook until tender but retaining their bright green color, about 4-5 minutes.

Heat oil in a large skillet over medium heat. Add garlic: cook, stirring often for one minute.

Add pine nuts; stirring often, until garlic and pine nuts are golden brown, about 3 minutes.

Transfer to skillet. Add Kosher slat and pepper. Toss to coat.

Serve immediately
