Asparagus, that summer vegetable that’s so good for you, either steamed, grilled or roasted, it’s a wonderful addition to your weeknight or any night meal. And now, with the addition of a balsamic vinaigrette and some freshly grated parmesan cheese, everyday meals just got elevated.
Ingredients:
- 1 stalk of asparagus
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 2 cloves garlic, chopped
- parmesan cheese, grated
Directions:
Preheat oven to 425°F.
Whisk together oil, vinegar and garlic
Line a baking sheet witht parrchment paper ad arrange the asparagus on top
Pour the vinaigrette over the asparagus and coat well.
Roast for 8-10 minutes
Remove and let cool slightly
Top with desired amount of freshly grated parmesan.
