A cake that is both gluten and dairy free and contains no refined sugars. Sound too good to believe? Make this now and again at Passover and you will be so glad that you did!
Ingredients:
- 2 ripe bananas
- 1/3 cup maple syrup
- 1 teaspoon vanilla extract
- 2 eggs
- 3 cups almond flur
- 1 teaspoon baking powder
- 1/4 cup olive oil
- 1/2cup chocolate chips
- 1/4 cup unsweetened coconut flakes
- 1-2 tablespoons maple syrup
Directions:
- Preheat the oven to 350°F
- In a greased pie pan, mash the bananas
- Add the 1/3 cup of maple syrup, eggs, vanilla extract, almond flour, baking powder and olive oil.
- Whisk together until well blended and spread evenly into pie plate.
- Sprinkle the coconut and chocolate chips on top.
- Drizzle maple syrup on top.
- Bake for 25 minutes or until cake tester comes out clean.
- Let cool and enjoy!
This is right up my alley. I think I’ll make it for our friend who is coming to visit.
