Here is another cottage cheese ice cream recipe that i beg you to try…and….you’re welcome….yes it’s that good if you have peanut allergies, replace the peanut butter with almond butter or leave it out entirely. However, add the dark chocolate chips, because they add that sweet crunch, and are healthy!
Ingredients:
- 2 16 ounce containers of regular cottage cheese or plant based ricotta cheese like Kite Hill.
- 1/2 cup honey
- 1/3 cup cocoa powder
- 1/2 cup peanut or nut butter of your choice
- chocolate chips
Directions:
To a blender or food processor, add cottage cheese, honey and chocolate, and mix well.
Pour into freezer safe container.add the nut butter and mix in gently using a knife to create swirls. Sprinkle dark chocolate chips on top.
Freeze for at least 2 hours to obtain ice cream consistiency.
Store in the freezer This is so delicious, it will not last you even a week!
It looks so creamy. I’ve made ice cream with coconut milk but never cottage cheese. But I’ll be trying this soon. It sounds fabulous.
