I love baked oats…they are wholesome, delicious and good for you! This recipe is fantastic and all of my gluten free friends love when I serve it for dessert! But you can have it for breakfast or lunch and I promise it will satisfy you for hours!
Ingredients:
OAT BASE
- 3/4 cup oat flour
- 3 cups plant based milk (I use oat milk)
- 1 tablespoon maple syrup
- 2 tablespoons chia seeds
- 2 teaspoons vanilla
- 1 1/2 teaspoons cinnamon
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup pecan pieces
- CANDIED PECANS
- 1 cup pecan halves
- 1 tablespoon olive oil
- 3 tablespoons maple syrup
Directions:
Mix the ingredients for the oat base in a 9 inch pie plate until well combined.
Fold in the pecan pieces.
To make the candied pecans, add pecan halves to a pan with olive oil, maple syrup and a pinch of salt and cook over medium heat for 3-4 minutes.
Place your candied pecans on top of your oats in a circular pattern then bake for 35-40 minutes at 350 °F.
