I am obsessed with this recipe for Chocolate bark.It made with goji berries, pistachios and dark chocolate, which are all which all superfoods, hence the title “Superfood Chocolate Bark. This is hands down my favorite version of Chcolate Bark because the goji berries add the right amouint of crunch with just a hint of sweetness.
Ingredients:
16-20 oz dark chocolate (I use Hu)
2 tsp organic maple syrup or honey (for drizzling on top)
1/4 cup crushed pistachios
1/4 cup goji berries
1 few pinches of sea salt (for sprinkling on top)
Directions:
- In a large saucepan or double boiler, melt the chocolate slowly (stirring frequently to avoid burning).
- Line a baking sheet or glass pan with parchment paper and pour the melted chocolate onto the parchment. Smooth with a spatula and add more chocolate to achieve your desired thickness. Mine was about 1/4 inch.
- Sprinkle the crushed pistachios, goji berries, and salt on top. Drizzle the honey/maple syrup at the end.
- Pop the baking sheet/pan into the freezer for a few hours to set.
- Break into pieces with your hands or a knife and serve!
- Store in the freezer or fridge – this will melt quickly if left out.
