Crispy, healthy delicious….the superlatives are never ending. You need to make these ASAP!
Ingredients:
- 1 acorn squash, halved, seeds removed and cut into small wedges
- 2-3 tablespoons avocado oil
- 1/2 tablespoon paprika
- 1/2 tablespoon oregano
- 1/2 tablespoon onion powder
- 3 ounces parmesan cheese grated
Aioli Sauce:
- 2 tablespoons mayonnaise
- 2 tablespoons greek yogurt
- zest of 1 lemon
- juice of 1/2 lemon
- 1 garlic clove, minced
- 1 teaspoon paprika
- pinch of salt
- chili flakes to taste
Directions:
In a bowl, mix all the spices with the oil and toss in the squash.
Coat both sides with the parmesan cheese.
Lay on a parchment lined baking sheet and bake at 425° F for 20 minutes. Flip them and bake for an additional 2-5 minutes.
Make the Aioli Sauce and then dip in!!
