This recipe is a winner, from it’s colorful presentation to it’s healthiness to it’s deliciousness. It is easy to prepare and I guarantee you will be recreating many times after it’s first appearance at your dining table!
Ingredients:
- 1 pound salmon
- 1 orange sliced thinly
- 1 lemon sliced thinly
- 3 tablespoons olive oil
- 1/2 cup fresh dill, chopped (divided)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tsp paprika
- 1 tablespoon dried parsley
- kosher salt
Directions:
Preheat the oven to 350° F
Line a baking sheet with parchment paper and arrange half of the orange and lemon slices close together and overlapping so that the salmon can lay across them.
Lay the salmon on top and sprinkle with kosher salt
Make the sauce by whisking together the olive oil, 1/2 the dill, garlic powder, onion powder, parsley and paprika.
Spread the mixyure on top of the salmon.
Top with the remaining orange and lemon slices.
Bake for about 30 minutes, 7 minutes more if you prefer it cooked through.
Top with pomegranates, the remainder of the dill and drizzle with olive oil .
Serve immediately.
