It’s soup season and this one is fantastic! You can whip it up in minutes and devour it in seconds. Trust me…it’s that good!
INGREDIENTS:
- 3 tablespoons olive oil
- 3 leeks sliced thinly, discard the stems
- 3 medium zucchini
- 1 large or 2 small cauliflower heads
- 2 garlic cloves, smashed
- 3 bay leaves
- 2 teaspoons thyme
- 1 teaspoon salt
- 6 cups vegetable broth
- 1/2 cup fresh Italian parsley
- juice of one lemon
Directions:
In a large stock pot, heat the olive oil over mdium high heat
Add the leeks and saute with the garlic until translucent. Add the zucchini and cauliflower, thyme, bay leaves.
Add broth and bring to a boil. Cover and simmer for 20-30 minutes.
Remove bay leaves and add the parsley leaves and process with a hand held or regular blender until smooth.
Return to pot and add lemon juice.
Serve hot and enjoy!
