If you are vegan, you just hit the jackpot! if you are not vegan, as I am not as well, you simply must try this recipe. It’s so good, that it just might turn you vegan after all. Nutritional yeast gives this sauce its cheesy flavor and the spinach and peas make this bright green dish a true work of art! This whips up in the amount of time it takes to cook the pasta. easy “PEA-SY!”
Ingredients:
- 2 handfuls of spinach1 cu fresh or frozen peas
- 1/2 cup cashews (soaked in hot water for 10 minutes and drained, to soften them)
- 1 cup Oat Milk1/4 cup (heaping) Nutritional Yeast
- 1 tablespoon tahini
- 1 tablespoon lemon juice
- 1 clove garlic
- 1/4 teaspoon paprika
- salt and pepper to taste
Directions:
- Cooked pasta of your choice.
- In a heavy skillet or frying pan, on medium heat, sauté spinach, and peas until spinach is just wilted and frozen peas (if using) are thawed. Do not overcook. Veggies should look bright green. Remove from heat.
- Add to a blender with the remaining ingredients.
- Mix into drained pasta.
I can easily make this. Maybe I will swap out broccoli for the peas because of Rob’s legume issues.
