If you ever tried Trader Joe’s Egg White Salad, you would understand why I was obsessed with it. Low calorie, low fat, low cholesterol and delicious, why on earth would they discontinue something so satisfying and good for you? Well, it beats me. That’s why I decide to try to recreate it…and mine is just as good, if not better!
Ingredients:
1/2 cup Olive Oil
2 tablespoons Apple Cider Vinegar
1/2 cup Dill Pickle Juice (straight from the pickle jar)
1/2 teaspoon Celery Salt
1 tablespoon Dijon Mustard
1 teaspoon Maple Syrup
Pepper to taste (a few grinds of the mill)
2 tablespoons chopped Chives
Hard-boiled egg whites, chopped
Directions:
Hard boil 6 eggs
Let cool, peel and discard yolks.
Chop the whites into small pieces.
For the dressing, combine all of the ingredients above and shake well.
Pour about 1/3 of the dressing over the egg whites and mix well.
Store remaining dressing in refrigerator.
